Lemon Chews

2 - 3 cups soaked cashews
Zest from 2 lemons (just the outer yellow rind - not the white)
Juice from 3 lemons
2 cups coconut
About 1/2 cup or more agave nectar or honey (to taste)
Any leftover almond pulp from making almond milk can be added

Process until mixture is smooth in food processor. I like to pipe it on to the solid sheets with an easy accent decorator (Pampered Chef) into rings and letter and other shapes. You can make little patties on the sheets too. I think when it is thinner like that it dries quicker. They need to dehydrate for at least a day. They'll darken up a bit. I know it is a lot of lemon zest but it is just bursting with lemon flavor!
