Mexican Vanilla Frozen Yogurt

1 c. Almond milk
1/2 of juice from young Thai coconut 
1/2 of meat from young Thai coconut
2 Medjool dates
1/8 c. honey (more or less to your "sweetness" preference)
1 tsp vanilla extract
Sprinkle
cinnamon to taste
Ice to desired texture

Blend in blender til nice and creamy. If it's too liquidy, just add more ice and blend again. Use a spatula every so often to make sure all ice gets thoroughly processed.

A nice topping to this frozen yogurt would be raw cookies or some whole almonds or pecans.

YUM!!!!

(You could also make this mixture without the ice, pour into ice cube trays, freeze, then blend in til creamy. Will be less thin that way, too. But either way is great!)
