Zesty Lemon Bites

4 c. oat groats (Ground fine in food processor)
1/2 c. lemon juice and the zest of one lemon
1/2 c.
honey
1/2 c. shredded coconut
1/2 c. raisins
1/2 c.
almonds (coarsely chopped)

Combine lemon juice,
honey, coconut, and raisins to marinade "Lemon Combo."

Add "Lemon Combo" to oats (after grinding fine in food processor). Blend until smooth then fold in nuts. Shape into squares on Teflex sheets (recipe makes 2 sheets). Dehydrate at 105 degrees for 12 hours, then remove from sheets, cut into 1-inch squares and dehydrate on mesh at 10 degrees for another 4 hours or to desired consistency. Enjoy.

Yield: about 100 squares.
